Taking a look at the software ecosystem of other retro handheld devices with low resolution like the gameshell, I came across the GitHub - eduardofilo/RG350_adam_image which is build from some anbernic consoles.
It seems to be using a launcher called simplemenu : GitHub - fgl82/simplemenu: Simple menu launcher for the new Bittboy, Pocket Go, RetroFW and OpenDingux devices which some themes that are built for 320x240 resolutions :
